山田錦の親である短稈渡船を復活栽培させた、府中誉「渡舟」の入門編とでもいうべきお酒がこの濾過前五十五。この五十五は、55%まで磨き上げた短桿渡船を低温で仕込み、ふくよかな香味に仕上げた純米吟醸酒です。渡舟のボリューミーな味わいは感じさせつつ、同時に綺麗でなめらかな印象も。適度なキレもあり、非常にバランスの取れた味わいに仕上がっています。
