Cedar-Barrel fermented Yamahai-Shikomi yielding subtle & layered complexity, interwoven with the fresh acidity that Yamamoto sakes are renowned for. This is a rare namazake expression released in limited quantities with a slightly greener profile as compared with the hiire edition.

貴重な秋田杉のオーク桶で発酵させた山廃は、繊細で何重にも重なる複雑さを生み出しており、さらに山本の特徴であるフレッシュな酸味も織り込まれています。火入れ版に比べ、やや青みがかった輪郭が特徴。比較的シャープな印象の酸味が、口の中で躍動的に広がります。数量限定でリリースされた希少な生酒です。
