For the Noguchi Naohiko Sake Institute, craftsmanship begins with the rice itself. This rare rice shochu was born from a desire to explore what lies beyond sake while preserving the same uncompromising brewing philosophy that defines the Institute's Junmai Ginjo. Using Hotarumai rice grown exclusively in the Institute's home valley—where clear streams and fireflies still shape the landscape—the base sake is carefully brewed before being vacuum-distilled into an authentic honkaku shochu. The result is a spirit that bridges two traditions, expressing the elegance of ginjo aromatics alongside the rich sweetness and depth of rice.

農口尚彦研究所にとって、酒造りの原点は常に米にあります。この米焼酎は、日本酒造りで培った技術と哲学を別の形で表現したいという想いから生まれました。原料には、清流に蛍が舞う故郷・小松の谷でのみ育てられるブランド米「蛍米」を使用。丁寧に醸した酒を減圧蒸留することで、吟醸酒を思わせる華やかな香りと、米本来の甘みと旨味を兼ね備えた一本に仕上げています。

Noguchi Naohiko Sake Institute農口尚彦研究所

Noguchi Toji, now in his 90s, has been a Toji since the young age of 27. He has won 27 Gold Medals at the Annual Japan Sake Awards among uncountable other awards over his career and was even presented with the prestigious Yellow Medal of Honor for Master Craftsmanship by the Emperor of Japan.
