An aluring and gorgeous bouquet courtesy of the R-5 sake yeast. The Midnight Blue is a masterful Genshu with an end-point ABV of just 16%. The Akita R-5 yeast was developed through a collaborative effort by Akita brewers and Yamamoto was the first to showcase the yeast.

山本ピュアブラックの姉妹品。使用している「こまち酵母R-5」は、秋田県醸造試験場が華こまち酵母から選抜分離した新酵母で、香りも味も華やかで、軽快な酒質に仕上がります。フルーティーでキレの良いシャープな印象の「山本ピュアブラック」とは趣きを変え、上立ち香は爽やかでフローラルですが、酸味・味わいともおだやかで口当たりも柔らかくマイルドです。
