Brewed with one of the world’s smallest polishing ratios at 7%, KIZASHI delivers exceptional purity, clear sweetness and refined umami, designed to age beautifully. Working with highly polished rice makes it extremely difficult to produce koji, making it difficult to extract the umami inherent in the koji. Enjoy the result of successfully extracting 1.5 times the rice umami of "Zankyo Super 7," which is also polished to 7%.
It will mature beautifully if stored in the refrigerator.

This is a precious bottle, limited to 1,000 bottles per year.

2025 - Akito Okunaka: "INTER-WORLD/Cocooner: Apparent motion of celestial bodies" (2025)

Born in Kyoto Prefecture in 1981, Okunaka is the co-director of AoiOa/AO Institute of Arts and organizes the Kizugawa City Yamashiro Cultural Center Hands-on Art Course. He creates self-sustaining soft inflatable sculptures inspired by the air, earth, and sun, based on the motifs "The Bubble Structure of the World" and "The Dynamism of Relationships."
