Nara Underwater 2026 アンダーウォーター 2026

UNDERWATER is brewed in collaboration with Kaze no Mori, a renowned sake brewery, also based in Nara. Sake yeast, Shikomi-mizu (water designated for sake brewing), and soyashi-miz (water from ancient Bodaimoto brewing) develop distinctive ginjo aromatics.

The is the 6th annual collab & for 2026, a decision was made to prolong fermentation, at slightly lower temperatures. The cooler long-term fermentation worked well to coax out gorgeously elegant ginjo aroams that linger on the finish. 

With a touch of alcohol warmth at 11% abv, Underwater finishes dry & on the mid-palate you'll pick up distinct fruity notes—strawberries, apples & nectarines.

奈良県の日本酒・風の森とコラボレーションした「UNDERWATER」。日本酒に使用される清酒酵母と仕込み水、そやし水を用いて醸造した、吟醸香が豊かに香る一杯です。6年目のコラボレーションとなる2026年の「UNDERWATER」は、これまでよりも低温で発酵期間を長く取ることで、穏やかながら吟醸香の余韻が続くように仕上げました。飲み口はやや辛めでドライながら、アルコール由来の甘みが感じられ、イチゴやリンゴを思わせるフルーティな吟醸香がくっきりと楽しめる一杯となっています。
