Youthful acidity meets an amplified sweetness- the touch of ori sediment left in the bottle giving a soft, hazy lift - then finishes with that characteristic bitterness of a fresh press, the kind that wakes the palate and asks for another sip. a commemorative new sake, first brewed and first squeezed, it carries the scent of young green apples, a bright citrus edge, and a fresh, clear, crisp line. there’s a piquant, gassy sensation: alive, almost electric, tempered by a slight astringency that feels seasonally true, a taste you only catch once each year. enjoy it chilled, alongside sushi and the clean, briny things, a sake that awakens the palate and leaves you wanting more.

その年の仕込みが開始されて最初にしぼられた記念のお酒です。若い青林檎のような爽やかで、甘い果実の香り。 口に含むと、若々しいフレッシュな酸味と、若干おりが絡んでいることによる甘みの増幅が感じられ、後味の程良い苦味が新酒らしい味わいとなっております。あまり冷やし過ぎず、約10℃前後の冷酒で、ガラス製の酒器でお楽しみください。

Noguchi Toji, now 88 years old, has been a Toji since the young age of 27. He has won 27 Gold Medals at the Annual Japan Sake Awards among uncountable other awards over his career and was even presented with the prestigious Yellow Medal of Honor for Master Craftsmanship by the Emperor of Japan.
