The Chardonnay wine yeast provides a distinctlively refreshing acidity more akin to white wine, while fruity Ginjo aromas are developed from UT-2. In tandem with the rusticity of locally cultivated Akita rice, the final product is truly transformational.

蔵元の山本社長が海外で入手したシャルドネ用のワイン酵母と、秋田の清酒酵母UT-2を使用しチャレンジした、全く新しいジャンルの日本酒です。味わいにワイン酵母特有の爽やかな酸味があり、純米吟醸酒ではありますが、いかにも上質な甘めの白ワインを想わす風味を感じられ、個性的な仕上がりとなっています。和韻「Wain」とは「調和」を意味し、めったに共演することのない2つの酵母を組み合わせることで、生まれる調和を強調しています。
