The name Ultimus is taken from the word "ultimate", highlighting this sake's position as Matsunotsukasa's masterpiece. Aged for over a year in the brewery at sub-zero conditions before shipping, it retains the fresh notes that strike a contrast with its silky, clear character.

「Ultimus」(アルティマス)とは、ラテン語で「究極の・最高の」等の意味をもち、「松の司」の最高峰と呼べる品位と繊細さが伺えるお酒です。100%特A地区山田錦(兵庫県東条町産)使用し、中取りのバランスが最良のところだけを瓶詰めしております。氷点下の蔵で1年以上熟成させてから出荷されるため、絹のような透明感とフレッシュな香りが残っており、口に含むと洗練されたお米の旨みや桃、マスカットを思わせるフルーティーさが口いっぱいに広がります。心地よい酸のおかげでハリのある華麗な余韻を楽しむことができます。
