Through this conundrum which plagued the brewery and nearly led to its closure, due to his painstaking efforts to fix his failing brews at that time, Mr. Matsuura happened upon sparkling sake by way of a secondary fermentation process which eventually led to their ever-popular Sen label. This is possibly the first Sparkling sake to have been created in this way.
The brewery also stands out in its commitment to exclusively brewing Junmai sake and to ongoing efforts to dedicate its off season to growing and developing locally grown strains of Sake rice, ideal to the climate and natural environment of Ishikawa, in efforts to further express the unique terroir of the area.
