For a very small operation with limited annual sake production at around 1,300 Koku per year, roughly 20% the volume produced by one of the big breweries of Japan, Ryujin Brewery takes exemplary care to ensure that the quality of its sake is second to none. 

Having invested in state-of-the-art equipment such as their very own in-house rice milling machine, a very unusual feature for a brewery of its size, a state-of-the-art flash pasteurization unit and a fully refrigerated warehouse, Ryujin is able to make wonderfully fresh tasting sake.
