Fukuchiyo Shuzo provides an opportunity to delight all of your five senses at Onyado!

Hizen, once well known for its Soy sauce and Miso producers, is full of preserved historic buildings.  There is actually a street named “Sake Brewery Street” lined with Kura,  earthen storehouse buildings. Along this street sits an iconic heritage structure with a thatched roof not often seen in modern times . This is the auberge "Onyado Fukuchiyo" operated by Fukuchiyo Sake Brewery.

The general manager of this project, Rie Iimori, had a dream to boost the vibe of the town by refurbishing an old soy sauce brewery that had been long abandoned. The 200 year old structure took 7 years to renovate. 

Since being selected as the IWC (International Wine Challenge) Champion Sake in the SAKE category in 2011, Fukuchiyo Sake Brewery has been visited by many sake fans from all over the world. However, the town had no restaurants or accommodations, so their stays were short.

The Iimoris reflected that there are many historical wineries in Europe that operate auberges, so why not a sake brewery? 

かつて醤油と味噌の生産地として栄えた肥前には、現在、歴史的建造物が数多く保存されています。 「蔵」と呼ばれる土蔵造りの建物が立ち並ぶ「酒蔵通り」には、現代では貴重な伝統建築が特性の茅葺屋根の建物が並び、 富久千代酒造が営むオーベルジュ「御宿 富久千代」もそのうちの一軒です。

このプロジェクトの総責任者である飯盛理恵氏は、長い間廃業していた古い醤油醸造所を改装して町の活気を高めたいという夢を持っていました。 そこで、二百年前の建物を七年もの歳月をかけて改装し、御宿　富久千代を建てました。

2011年にIWC（インターナショナル・ワイン・チャレンジ）のSAKE部門のチャンピオン酒に選ばれて以来、富久千代酒造には世界中から多くの日本酒ファンが訪れてきます。 しかし、酒造の周辺にはレストランや宿泊施設がなく、飯盛氏は町に訪れる人の滞在期間が短かいことに気が付き、それが御宿　富久千代を立ち上げるきっかけとなりました。

Guests enjoy breakfast and dinner at “Souan Nabeshima” by Chef Takuma Nishimura. With 5 years at 3 Michelin Star Japanese restaurant, “Ishikawa Kagurazaka” and popular mod French restaurant “Restaurant Sola” in Fukuoka, the passionate chef makes it a point to visit the producers of the ingredients he chooses for his cooking. 

Each dish is paired with a Nabeshima sake carefully selected by Restaurant manager Yuki Matsuzaka and Mr. Iimori. The dishes and sake cups are carefully selected from the collections of famous Kyushu artisanal pottery such as Karatsu, Arita, and Imari.

御宿　富久千代では「草庵　鍋島」にて朝食と夕食を楽しめます。 ミシュラン三ツ星の日本料理店「石川神楽坂」や福岡のモッズフレンチ人気店「レストランそら」で五年以上の経験を持つ西村卓馬シェフが、県内各地のこだわりの生産者を訪ね、仕入れてきます。

それぞれの料理に、店長の松坂有紀さんと飯盛さんが厳選した鍋島の地酒を合わせています。また、 唐津、有田、伊万里など九州の名窯からうまれた器やぐい呑みが、より一層食事やお酒のおいしさに拍車をかけます。
