A Yamahai for the Summer season, quite uncharacteristically fresh and light in body. The Sexy Yamamoto sake yeast, collected from Yamamoto brewery's ambient yeasts is used for characteristic aromas of melon. The palate is juicy and acidic, bright like fresh cut pineapple.

夏向けの山廃で、敢えて「冷やして楽しむ山廃」をテーマに仕込んでいます。非常にフレッシュで軽いボディ。山本酒造の常温酵母から採取したセクスィー山本酵母を使用し、メロンのような特徴的なアロマを醸し出しています。乳酸よりもリンゴ酸やコハク酸を多く生成する手法で、山廃のボディ感よりも「爽快な酸味」の際立った現代的な味わいです。口当たりはジューシーで酸味があり、切りたてのパイナップルのように鮮やか。現代の味覚に合うよう再構築され、非常に個性溢れる存在感を放っています。
